kai USA Ltd introduced Shun Cutlery in 2003. The blades on the Shun Classics are a 33 layer Clad VG-10, which means there are sixteen layers on each side of a single piece of VG-10 stainless steel. The 33 layers are clad together by using extreme heat and pressure. The process used in creating the blades for Shun Cutlery is the same as that used to create authentic Samurai swords. The high carbon VG-10 blade is protected from the elements, which cause corrosion and rust, by the less reactive steels on the outside of the blade. The blades are bead blasted which helps to create the unique look of the Shun Cutlery as well as create stick resistant properties on the knife. The handles are made of pakka wood, which is dyed black birch, layered between sheets of resin and fused together at very high temperatures. The result of which is a beautiful wood handle which is dishwasher safe. The Shun series of kitchen cutlery has worked with Alton Brown, from the Food Network, as well as famous knife maker and designer, Ken Onion, to produce two separate and unique series of cutlery. Shun Cutlery is ergonomic to give perfect control and reduce fatigue while in the kitchen.
