A perfect complement to their 8" Chef knife, the Paring Knife offers a premium, high performance cutting tool with modern materials in a compact and versatile package. This version comes in high performance Bohler M390 with a Dark Satin finish and Micro Textured 3D Carbon Fiber handles and black oxide stainless steel hardware.

Blade: Full tang construction gives the Paring Knife durability and balance while the 2.3 mm blade stock, full flat grind and distal taper all provide exceptional slicing performance. The M390 blade steel offers solid performance for food prep in the kitchen or in the field with just over 3.5" of cutting edge. An ultrafine satin finish is then coated with a fine DLC for a classy and discreet Dark Satin finish.

Handle: Carbon Fiber handle scales are 3D contoured with a generous palm swell for comfort and security in a variety of grips with a thin taper toward the blade for pinch grip use. The swell along with the micro textured on the scales offer a secure and comfortable grip for all manner of chopping tasks. The scales are secured to the tang via 416 stainless custom fasteners heat treated to 40 Rc and black oxide finished. Handwashing is recommended.

Sheath: Comes with a high quality leather blade cover for transport.

Bohler M390: Bohler M390 has become an extremely popular choice for high-end user grade knives thanks to its extreme edge retention. M390 also has a good corrosion resistance, meaning most users can avoid problems by simply wiping off their blade after each use. Another great feature of this steel is its ability to resist burr formation during sharpening. Comparable steels are CTS-204P and Duratech 20CV.
