The Itamae (Chef) series comes with blades of Aogami Super Blue clad between layers of stainless steel, octagonal burl G10 handles with black G10 bolsters. The Wakiita (Journeyman) Series has low-maintenance, high performance, CTS-BD1N Stainless steel blades and octagonal black G10 handles while the Minarai (Apprentice) series has the same stainless steel blades with durable, injection molded polypropylene handles with the same easy to maintain, high performance functionality in a more basic and affordable format.
Available in five patterns: Petty, Funayuki, Nakiri, Bunka Bucho, and Gyuto. These patterns were carefully chosen to represent his most popular custom designs while offering a range of tools perfectly suited for every food-preparation chore.
