The Smith & Sons Essential Kitchen Set is a trio of knives to handle nearly every aspect of food preparation work. A classic Japanese style Santoku is a larger, general purpose knife that handles meat, fish and vegetables and can perform slicing, chopping and dicing making it a highly versatile piece. The semi-flexible boning/utility knife can be used for making fillets, breaking down meat and finer tasks that are more suited to the more narrow blade profile. Finally, a paring knife rounds out the set. This small all-purpose knife is ideal for peeling or "paring" fruits and vegetables, and other small or intricate work. All three knives are constructed of stonewashed, full tang AEB-L stainless steel with burlap Micarta handle scales. Includes a wood box for display and storage.

Blades: AEB-L stainless steel blade construction delivers durability, an easy to maintain razor sharp edge and excellent corrosion resistance. The blades sport a tumbled finish that hides wear from use while the thin stock and full flat grinds offer exceptional cutting performance. Each of the three blades is purpose built with the trio covering a wide range of kitchen tasks and food prep.

Handles: Burlap Micarta scales are supported by full tang constructions and paired with hand filling, ergonomic designs for a secure and comfortable grip. These are designed for extended use in order to get the job done. Black stainless hardware holds the scales securely and allow for scales to be removed if necessary for cleaning and maintenance.

Bohler AEB-L: Originally developed for razor blades and described as a stainless 52100 AEB-L takes a very fine edge, is easy to sharpen and is highly corrosion resistant. Edge retention is good with excellent stability (resistance to rolling and chipping) which allows for a thinner edge and better cutting performance. Sandvik 13C26 is a copy of AEB-L.
