Literally meaning “in front of the cutting board,” Itamae is an extremely prestigious title reserved for highly skilled sushi chefs. Consistent with that elite status, the Carter Itamae Series is the highest tier in the Collection and proudly features premium materials and uncompromising craftsmanship. The elite Itamae Series features blades of laminated Aogami Super Blue and SUS410 and octagonal handles made from Burl G10 with black G10 ferrules.

Literally “cow blade,” the Gyuto is a thinner, Japanese equivalent of the Western chef’s knife. A versatile design, the Gyuto is suitable for slicing, carving, chopping, and detailed food preparation chores.

Blade: The fully flat ground blade is san mai SUS410 stainless steel with an Aogami Super Blue core. The outer layers of tough, stainless steel protect and support the ultra-hard carbon-steel center layer that forms the blade’s edge. The blade has a fine tip for detail cutting with the long thin blade excels at all types of slicing and carving work. The long blade makes the Gyuto a solid choice for chopping large volumes of vegetables as well. The blade has a handsome machine satin finish with polished edges and distinctive laminate line that gives the knife a high-end look.

Handle: The handle is a traditional octagonal shape that is comfortable in multiple grips and made from smooth, Burl G10 for a wood like look. Black G10 ferrules with contrasting white liners lend a more traditional style without compromising performance or comfort. The material is durable, nonporous, heat-resistant, and easy to clean. The extra weight of the material gives the knife a nice balance during extended use.

Aogami Super Blue Carbon Steel: Japanese high carbon steel produced by Hitachi specifically developed for tools and knives. The highest wear resistance and lowest toughness of the Aogami steel family, Super Blue still easily crushes through chicken bones with appropriate geometry. Can be hardened into the mid-60s HRC. Good edge stability and fine edge holding (~10 DPS).
