Literally “cow blade,” the Gyuto is a thinner, Japanese equivalent of the Western chef’s knife. A versatile design, the Gyuto is suitable for slicing, carving, chopping, and detailed food preparation chores.
Blade: The fully flat ground, CTS-BD1N stainless steel blade has a fine tip for detail cutting with the long thin blade excels at all types of slicing and carving work. The long blade makes the Gyuto a solid choice for chopping large volumes of vegetables as well. A handsome machine satin finish with polished edges gives the knife a high-end look.
Handle: Made from smooth black polypropylene the handle is a traditional octagonal shape that is comfortable in multiple grips. The material is durable, nonporous, heat and chemical resistant and easy to clean. The lightweight of the material offers good balance while minimizing fatigue during extended use.
CTS-BD1N: BD1N is a high Carbon, high Chromium, Nitrogen-Enriched stainless steel from Carpenter. It offers a high working hardness while retaining good toughness and edge stability. CTS-BD1N works well as a knife steel with a fine grain, solid corrosion resistance and respectable edge holding ability as well as being capable of handling a thinner (12-15 DPS) cutting geometry.
