Wakiita is Japanese for “near the cutting board” and refers to senior apprentices skilled enough to assist high-ranking chefs. Equivalent to sous chefs or journeyman chefs in Western kitchens, they are accomplished culinary professionals well on their way to becoming expert chefs. Bunka Bocho literally means “cultural knife,” because of its role in making traditional Japanese cuisine in the home. This is an all-purpose knife suitable for preparing meat, vegetables, and fish and is closely related to the Santoku (“three virtues”) knife, with a more acute and utilitarian point.
Blade: The fully flat ground, CTS-BD1N stainless steel blade has a an acute tip for fine work and slicing while the slightly curved, Santoku-like blade works well for chopping and push-cutting as well. An excellent all-around kitchen tool. A handsome machine satin finish with polished edges gives the knife a high end look.
Handle: Made from smooth black G10 the handle is a traditional octagonal shape that is comfortable in multiple grips. The material is durable, nonporous, heat resistant and easy to clean. The extra weight of the material gives the knife a nice balance during extended use.
CTS-BD1N: BD1N is a high Carbon, high Chromium, Nitrogen-Enriched stainless steel from Carpenter. It offers a working hardness, up to 63HRC, while retaining good toughness and edge stability. CTS-BD1N works well as a knife steel with a fine grain, high corrosion resistance and respectable edge holding ability as well as being capable of handling a thinner (12-15 DPS) cutting geometry.
