Wakiita is Japanese for “near the cutting board” and refers to senior apprentices skilled enough to assist high-ranking chefs. Equivalent to sous chefs or journeyman chefs in Western kitchens, they are accomplished culinary professionals well on their way to becoming expert chefs. The second tier of Spyderco’s Murray Carter Collection, the Wakiita Series captures the spirit of the journeyman chef by expressing Carter’s highly refined designs with workhorse materials: Solid CTS-BD1N stainless steel blades and smooth, black G10 handles.

From the French petit meaning “small,” the Japanese Petty takes the roll of the Western paring knife or the larger Utility knife. This blade is ideal for peeling and slicing fruits and vegetables, making garnishes, and other detailed food-preparation tasks.

Blade: The fully flat ground, CTS-BD1N stainless steel blade makes an excellent slicer that can handle detailed cutting chores. Handsome machine satin finish with polished edges gives the knife a high end look.

Handle: Made from smooth black G10 the handle is a traditional octagonal shape that is comfortable in multiple grips. The material is durable, nonporous, heat resistant and easy to clean. The extra weight of the material gives the knife a nice balance during extended use.

CTS-BD1N: BD1N is a high Carbon, high Chromium, Nitrogen-Enriched stainless steel from Carpenter. It offers a working hardness, up to 63HRC, while retaining good toughness and edge stability. CTS-BD1N works well as a knife steel with a fine grain, high corrosion resistance and respectable edge holding ability as well as being capable of handling a thinner (12-15 DPS) cutting geometry.
