The Sakura Carving knife from Viper is a modern interpretation on a classic kitchen knife, designed by Danish custom knife making duo Jens Anso and Jesper Voxnaes. The Sakura line of knives are cryogenically heat treated to maintain a long-lasting edge and are outfitted with beautiful hard wood handles adding style to an already classy design. This version comes with a satin finished blade and Ziricote wood handles.
Blade: Made from Buderus Nitro B, a nitrogen stainless steel which has been both vacuum and cryogenically treated to ensure a fine, long-lasting edge. All Sakura knives are heat treated to a hardness between 58-59 HRC for well-balanced performance. This paring knife has a fairly wide flat grind with a satin finish making it the perfect choice for most general kitchen tasks.
Handle: Stabilized Ziricote Wood was chosen for its rich character, with a unique appearance sometimes referred to as “spider-webbing” or “landscape” grain figure as well as its durability and resistance to moisture. Viper went with a full tang construction on the Sakura series with the scales being attached via customized stainless screws.
Nitro-B: German made, Nitrogen alloyed stainless steel that offers excellent corrosion resistance and edge stability with small grain size for a very fine edge.
