Details
The Great Eastern Northfield #63 Fish Tail in Desert Ironwood sets dense, wildly figured grain against a polished 1095 clip point. Its lean frame ends in a nickel silver bolster shaped like a fish tail.
- 1095 Clip Point Blade - The long, flat-ground clip point is 1095 carbon steel. It sharpens fast and takes a keen edge, but it is not stainless. Wipe it dry after use and add a light coat of oil. The satin flats will build a patina over time.
- Desert Ironwood Covers - Desert Ironwood is one of the densest woods a knifemaker can use, with rich color that runs from gold to deep brown. It is naturally oily and stable, so it holds up to handling better than most woods. No two knives share the same grain.
- Crisp Walk and Talk - Pull the blade by the nail nick and it walks out crisp and clean. The backspring talks with a sharp click as it sets the blade. Closed, the blade rests dead center between the liners. That kind of centering takes careful hand fitting.
- Classic Pinned Construction - Brass liners and brass pins anchor the covers, framed by nickel silver bolsters at both ends. A propeller shield sits on the front cover. Each knife is built in Titusville, Pennsylvania, and goes through more than 200 hand operations.
The Great Eastern Cutlery #63 Fish Tail
The #63 from Great Eastern Cutlery revives the Fishtail, a pattern first seen around the turn of the 20th century. It runs long when closed, but the slim handle rides easier than its length suggests. The Fish Knife version, built in Titusville, Pennsylvania, swaps the usual single blade for a clip point and a descaler. At the end of the handle, the tail bolster flares out like the fish tail, giving the pattern its name.
